Zucchini is a variety of squash belonging to the Cucurbita pepo species of the Cucurbitaceae family. Generally long and cylindrical in shape, zucchini is usually green when young and may turn yellow as it matures. The skin is thin and shiny and the inside may be white or slightly cream colored.
